Creamed Corn with Chili & Coriander
Corn with a kick
Creamed corn is a simple side that goes well with grilled halloumi. It can also be served as a vegetarian main dish. Chili gives it a kick of heat while coriander adds an exotic and aromatic flavour.
Ingredients (serves: 4)
2 (10 ounce) packages frozen corn kernels
2 tbsp olive oil
1 cup heavy cream
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons butter
1 cup whole milk
2 tablespoons flour
1 finely chopped green chili
1/4 cup freshly grated Parmesan cheese
3 tbsp chopped coriander
Directions
Put a pan on medium heat, combine the corn, olive oil, chili salt, pepper and butter. Fry in the pan.
Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Add the cream and cook for 2 more minutes.
Remove from heat, and stir in the Parmesan cheese until melted. Top with coriander and if you want more chopped green chili!
