Broccoli Stem Salad
Save your stems! Far from the lesser half of broccoli, the stems are just as nutritious as the florets. Slice the stalks thin with a sharp vegetable peeler and toss with your favourite salad ingredients.
Ingredients (serves: 4, as a side salad)
5–6 broccoli stems
1 bunch coriander, coarsely chopped
2 tablespoons olive oil
1 tablespoon light soy sauce
1 tablespoon black sesame seeds
Sea salt and freshly ground black pepper
1. Finely slice the broccoli stems and the radishes with a mandoline slicer. Place in a bowl, add coriander and toss with olive oil and soy sauce.
2. Season with salt and pepper. Sprinkle with black sesame seeds and serve.
