Peas with Mint & Feta Cheese
A flexible vegetarian alternative
This vegetarian dish can be served as both a side or a sauce. The creamy mix of peas and feta cheese with a hint of mint is a perfect blend of fresh flavours. Mix it with pasta for a complete vegetarian meal.
Ingredients
1 spring onion, sliced
2 tablespoons olive oil
2 cups English peas, shelled (about 12 ounces)
6 mint leaves, torn
100 g feta cheese, crumbled
Salt
Water
Directions
Sauté onion in two tablespoons olive oil, over medium-high heat. Add the shelled peas, a pinch of salt, and enough water to barely cover. Cook over high heat for 2 minutes, then add torn mint leaves. Continue cooking until the peas are tender, a few more minutes. Season with black pepper and add more salt if needed.
Mix with a hand blender until you get a creamy consistency. Add the feta cheese and stir. Top with olive oil and some more mint.
Serve alongside grilled meat, fish or mixed-in with pasta.
